While hydration is briefly touched on in the documentation, I haven't completely groked what the advantage of using is, aside from the fact that the hydrated records that are hydrated are read only. Is there a performance advantage or something else that I'm missing about using hydration?

If you're using classes with defined properties, the default option is the most performant one. Anyway, it depends on what you feel more confortable to work with.
